Although gluten-free and delicious typically sit at opposite ends of a really, really long dinner table, it is clearly not the case at Senza Gluten. Had the restaurant been named something else (“senza” means “without” in Italian), I would not have known that every single dish I was inhaling was gluten-free.

He knew early on that he wanted to create a completely gluten-free menu and restaurant that is safe for individuals with celiac disease. To ensure such a vision, Solo brought on board self-taught gluten-free consultant Erin Smith to confirm that all the ingredients used are gluten-free. Many nights, Solo would sleep on the couch in the restaurant’s basement so that he could have time alone at night to experiment with new dishes.
